Chicken Carbonaro

Here’s another delicious recipe from my friend Gilda. Enjoy!

  • 2 pkg. Uncle Ben’s rice A Roni
  • 10 oz. bacon made crisp and set aside with drippings
  • 1 lb. chicken breast, sliced
  • Garlic powder
  • 1 cup heavy cream or ½ and ½
  • 1 cup frozen peas, thawed and drained
  • 2 oz. Parmesan cheese, shaved
  • 3 green onions, sliced
  1. Cook rice…set aside with crisp bacon.
  2. Season chicken with salt and pepper; Saute in drippings.
  3. Add garlic and cream; simmer until it begins to thicken.
  4. Add peas; heat through.
  5. Stir in cheese, thicken to sauce consistency
  6. Serve over rice; Garnish with onions.(serves 8)
