Spinach Casserole

Here’s a recipe from the 80’s when we lived in Decatur, Georgia for seven years. It came from the kitchen of my neighbor, tennis partner and very special friend, Harriet. We were blessed with 7 years of good times with Harriet and her family before God moved us on to San Antonio, TX.

Spinach Casserole

  • 1 small jar of marinated artichoke hearts
  • small onion
  • 2 tbsp. Butter
  • 2 pkgs. Frozen spinach (cooked)
  • ¼ tsp. Nutmeg
  • ½ c. Parmesan Cheese
  • 1 small Philadelphia cream cheese

Put artichokes in bottom of casserole. Saute onion in butter until transparent. Mix onion with spinach, cheese, nutmeg, and cream cheese. Put over artichokes. Sprinkle extra Parmesan Cheese on the top. Bake at 350 degrees for 15 minutes.

    Only 7 years in Decatur? Glad I was a part of them. Lifelong friendships formed. I remember eating the best leftover cold fried chicken in the world at your house! Good food=good memories!
