Chicken Casserole with Cashews and Chow Mein Noodles
Hi Folks, running out of ideas on what to cook? Here’s another delicious recipe from years ago. My friend Shirlee from Peoria, Illinois served it at a luncheon in Atlanta and I haven’t forgotten how good it was. Nor have I forgotten her!
- 1 3 lb chicken
- ½ cup minced onion
- 1 4 oz. jar pimiento
- 2 cans chicken stock
- ½ cup chopped celery
- ½ green pepper, chopped
- 2 cans mushroom soup
- 1 cup salted cashews
- 1 can mushroom pieces with juice
- 4 small cans chow mein noodles
Mix together all ingredients except noodles and put in slightly greased casserole dish. Add noodles on top. Bake at 350 degrees for one hour.
