Ritz Thin Mint Cookies

If you love Thin Mint Girl Scout Cookies, you will love this recipe because it tastes VERY similar! I got the recipe from My Recipe Journey. If you can melt and dip chocolate, you can make these cookies! Just make sure to use ‘peppermint’ and not ‘mint’ extract because ‘mint’ is made from the leaves of a mint plant. And ‘peppermint’ is made from pure peppermint oil, which is more like the flavor of Girl Scout Thin Mint cookies.

Ritz Thin Mint Cookies (serves 8-10 people)

INGREDIENTS:

2 sleeves of Ritz brand classic crackers

1 & 1/2 pounds peppermint chocolate chips

NOTE…If you can’t find peppermint chocolate chips just use regular chocolate chips (milk choc. or semi-sweet) and add 1 tsp. peppermint extract. Extract must be peppermint, not just mint.

DIRECTIONS:

*Melt mint chips in microwave according to directions on package. Or if using regular chips, add in the extract before melting the chips. Stir melted chips. Keep the chips warm and melted by placing the bowl of melted chips over a simmering pan of water.

*Do not let the bowl touch the water or get any water on the melted chocolate or the chocolate will seize and become unusable. (However, this happened to me and I added a little milk and it worked fine.)

*Dip each cracker completely into the melted chocolate in a thin layer. This will be messy but so worth it!

*Place on waxed paper lined cookie sheet and freeze until firm.

(Once chocolate is firm place cookies on a platter to serve, or store in an air tight container.)
