Abigail’s Pecan Pie

This is our 17-year-old granddaughter, Abigail on her horse in Kansas. Recently, we visited her family in Carlisle, Barracks, PA. We enjoyed spending time with Brian, Katie, Abigail, Sarah, Elizabeth, and Hannah. Oh, and their golden retriever, Tanner. From a dance party with Brian and Katie to enjoying the snow while cutting down a Christmas tree to Thanksgiving dinner, a good time was had by all. For Thanksgiving dinner, Abigail made this pecan pie for us. It was delicious and will be a good recipe to use during the Christmas holidays.

Pecan Pie      pecan pie

  • 1 (9-inch) unbaked pie crust
  • 3 eggs, beaten
  • 1 cup dark corn syrup
  • 1 cup white sugar
  • ¼ cup melted butter
  • 1 tsp. vanilla extract
  • 1 cup pecan halves

DIRECTIONS:

Preheat oven to 350°F. Beat together the eggs, corn syrup, sugar, butter, and vanilla. Arrange pecans in bottom of pie crust and pour mixture over. Bake for 1 hour or until knife inserted 1 inch from edge comes out clean. Allow to cool before slicing.
