Avocado Strawberry Spinach Salad with Poppy Seed Dressing

Dry Falls in Highlands, NC – Due to all the rain, the water flow was greater than I’ve ever seen it.

This past week-end, our family (those who could come) gathered in Highlands, NC to celebrate Millie’s new adventure with RGM (Redeemed Girl Ministries), and to bid her farewell as she moves to San Antonio, TX. As you can imagine, it was a bittersweet time.  😦  But now we’ll have two daughters to visit in the same city.  🙂

Over the years, we’ve moved so many times, the Highlands house is the one place where our family has roots. This week-end added to our memory bank with a time of talking, laughing, playing, crying and praying together. The highlight for everyone was a family devo Jay put together, having to do with leadership. Each person read  a scripture depicting specific leadership qualities. This gave Millie the opportunity to share specifics about her new ministry, as well as prayer requests.

Over the week-end, we enjoyed lots of good food. The following is a salad we served on Friday night with chili (regular and my Turkey Chili with Black Beans). By the way, everyone like the turkey chili better. You can find that recipe on my blog, as well.

Avocado Strawberry Spinach Salad with Poppy Seed Dressing             


Prep Time: 10 minutes Yield: 2-4 Servings

Salad Ingredients:

  • 6 cups fresh baby spinach
  • 1 pint strawberries, hulled and sliced
  • 1 avocado, diced (or you can double this to 2 avocados)
  • 4 ounces crumbled gorgonzola or blue cheese  (I used gorgonzola, delicious!)
  • 1/4 cup sliced almonds, toasted
  • half a small red onion, thinly sliced
  • poppy seed dressing (recipe below)

Poppy Seed Dressing Ingredients:

  • 1/2 cup avocado oil (or any oil, such as olive oil)
  • 3 Tablespoons apple cider vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. poppy seeds
  • pinch of ground dry mustard (optional)
  • salt and pepper

To Make The Salad:  Toss all ingredients together with your desired amount of dressing until combined. Serve immediately.

To Make The Poppy Seed Dressing:  Whisk all ingredients together until combined.

So Easy and Delicious!
