Taco Casserole

My friend, Amelia and I enjoy varied connections. Her sister married my brother. And then, later, we were sorority sisters at the University of Georgia. We ended up marrying the guys we were dating then. And now, we’re reconnected. Amelia’s a great cook and shared a number of her recipes with me. This is one of them. Enjoy! Taco Casserole           taco casserole

  • 1 lb. ground beef
  • 1 bunch green onions, sliced
  • 1/8  tsp. garlic powder
  • 1 8 oz. can tomato sauce
  • 1 cup black olives or sliced mushrooms
  • ½ tsp. ground cumin
  • 1 envelope of taco seasoning
  • 1 can refried beans and ½ cup water
  • 1 16 oz. cheddar cheese grated (save some for topping)
  • 1 8 oz. bag tortilla chips in pieces


  • Lettuce
  • Taco sauce
  • Sour cream
  • Cheese

Brown ground beef in fry pan. Drain off fat. Add onions, garlic, tomato sauce, olives or mushrooms, cumin and taco seasoning. Simmer 15 minutes. Mash beans with water and combine with meat mixture. Layer tortilla chips, meat mixture and cheese in a two-quart casserole. Bake at 400 degrees for 25 minutes. Serve with topping of sour cream, lettuce, cheese and taco sauce
