Pineapple Casserole

Here’s a yummy recipe for a side dish or dessert. Great combination with pineapple and cheese, topped with Ritz Crackers.

  • 1 (20 oz.) pineapple chunks
  • 1 cup grated cheddar cheese
  • ¾ cup sugar
  • 3 tbsp. flour
  • Ritz Crackers (1 tube)
  • ½ stick butter or margarine, melted

Drain pineapple, reserving 1/3 cup liquid. Combine pineapple chunks and grated cheese. Combine sugar and flour and add to pineapple mixture. Pour mixture into greased casserole. Pour reserved juice over casserole. Crush enough crackers to cover surface. Pour melted butter over entire mixture. Bake at 350 degrees for 30-40 minutes until well browned and bubbly. Remove from oven and allow to set for 10-15 minutes before serving. This is good as a side dish for meals or with ice cream for dessert.
