Chicken-and-Broccoli Cobbler

New Take on an Old Dish: This is a Southern Living recipe. If you need to, you could use something less fattening than the Alfredo sauce.  Let me know if you find a good substitute. Meanwhile, this is delicious and may be worth the calories. 🙂

Chicken-and-Broccoli Cobbler      

  • ¼ cup butter, melted
  • 3 cups cubed sourdough bread (6 ½ oz.)
  • ½ cup pre-shredded Parmesan cheese
  • 3 cups small broccoli florets
  • 3 cups chopped cooked chicken
  • ½ cup drained chopped roasted red bell pepper
  • 1 (10-oz.) container refrigerated Alfredo sauce (found in deli dept.)
  • ½ cup sour cream
  • 2 Tbsp. dry sherry
  1. Preheat oven to 400 degrees. Drizzle butter over bread cubes in a large bowl; sprinkle with cheese and toss well.
  2. Combine broccoli and next 5 ingredients in a large bowl. Spoon filling into a lightly greased 2-qt. rectangular or oval baking dish or individual baking dishes; top with bread cubes.
  3. Bake, uncovered, at 400 degrees for 30 minutes (20 to 25 minutes for individual cobblers) or until bubbly and top is toasted.  (Makes 4 servings)
