Strawberry Salsa

Here’s another strawberry recipe from Southern Living. I’ve served this salsa on chicken and grilled salmon. I don’t usually rave over fish cooked at home. But this was outstanding. Now, I’ll look forward to having fish a couple of times a week. And it’s just in time for Memorial Day!

Strawberry Salsa   

Makes: about 2 1/2 cups  Hands-on Time: 15 minutes  Total Time: 1 hr., 15 min.

Whisk together 1/2 cup red pepper jelly, 1/3 cup each chopped fresh chives and cilantro; 1 Tbsp. lime zest; 1/4 cup fresh lime juice; and 1/4 tsp. dried crushed red pepper in a medium bowl. Stir in 2 cups chopped fresh strawberries and 1/3 cup sweetened dried cranberries; cover and chill 1 hour. Stir in 1 small avocado, diced, just before serving. Serve with grilled or pan-fried meats, poultry, or seafood.
