Cranberry Spinach Salad – The Ultimate Friendship

Here’s the recipe I served with the Chicken Rice Casserole. You can also serve it with Chicken Marsala. I haven’t tried the recipe yet but I’ll let you know if it’s a good one. These recipes also come from Taste of Home, Everyday Light Meals.  It seems to me you could adjust the sugar and have less carbs. Either way, enjoy!

      Cranberry Spinach Salad – (prep time : 20 minutes, yield: 8 servings)

  • 8 cups fresh baby spinach
  • 1 cup dried cranberries
  • 2 medium pears, cored and chopped
  • 1/4 cup cider vinegar
  • 5 tblsp. sugar
  • 1 tsp. dried minced onion
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. ground mustard
  • 1/4 tsp. paprika
  • 1/4 cup olive oil
  • 1 tbsp. sesame seeds
  • 1 tbsp. poppy seeds
  • 2 tbsp. chopped pecans, toasted

In a large bowl, combine the spinach, cranberries and pears. In a blender, combine the vinegar, sugar, onion, Worcestershire sauce, mustard and paprika; cover and process until blended. While processing, gradually add oil in a steady stream. Add sesame seeds and poppy seeds. Pour over salad and toss to coat. Srinkle with pecans.


Nutrition Facts: One serving (1 cup) equals:

  • 189 calories
  • 9 g fat (1 g saturated fat)
  • 0 colesterol
  • 28 mg sodium
  • 29 g carbohydrate
  • 3 g fiber
  • 2 g protein

Diabetic Exchange: 2 fat, 1 vegetable, 1 fruit 1/2 starch

  1. Yummm I love crunchy salads with sweet fruit and tangy dressing. And homemade dressings are so much better!!
