Fire and Ice Tomatoes over Romaine – Freedom . . . .

                                                                   

Before the summer runs out on good tomatoes, here’s an easy but good recipe for you.

Fire and Ice Tomatoes over Romaine 

  • 3/4 cup vinegar
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 1/2 tsp. dry mustard
  • 1 1/2 tsp. celery seed
  • 1/8 tsp. pepper
  • 1/8 tsp. cayenne pepper
  • 1 tsp. salt
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 6 tomatoes, peeled and sliced

Combine the first 8 ingredients and bring to a boil. Pour over pepper, onion and tomatoes. Chill for 24 hours. Can be served over Romaine or stored in a jar for a picnic. Serves 6.
