Tortellini Salad – Devil, Begone!
Here’s a yummy summer salad just in time for July 4th. Enjoy!
(You can do all the cooking and dicing the day before, but don’t mix ’til day you serve. Use any vegetables you prefer. Use your judgment on the amount.
- 2 pkgs. of fresh Tortellini with cheese
- snow peas
- black olives
- red and yellow bell pepper (in short strips)
- cherry tomatoes (halved)
- Oven Roasted Turkey Breast, diced
- Parmesan Cheese (at least 1/2 cup)
Boil Tortellini according to pkg. directions. Run under cold water to cool. Steam snow peas, broccoli, and carrots. Mix with rest of ingredients.
- 3/4 cup red wine vinegar
- 1 cup vegetable oil
- 4 tsp. garlic salt
- 2 tsp. black pepper
- 1 cup mayonnaise
Mix well and add to salad before serving – a couple of hours before won’t matter. (You may not need the whole amount of dressing.)
