Almond-Raisin-Broccoli Salad – The Enthusiasm Project

For the next three weeks, I’ll share recipes you might want to use for Easter. Don’t forget to share your favorite recipes with me. I’d enjoy passing them on to everyone else. 

This is a Paula Deen specialty, so you know it’s good! My friend Jeannie served it for lunch, and I loved it. I’m not crazy about raw broccoli, but this was delicious.

   Almond-Raisin-Broccoli Salad – Makes 8-10 servings)

  • 2 cups small fresh broccoli florets, coarsely chopped
  • 1 cup golden raisins
  • 4 slices bacon, cooked and crumbled
  • 3 green onions, sliced
  • 2/3 cup mayonnaise
  • 1/4 cup honey
  • 1 tablespoon fresh lemon juice
  • 1 (2.25-ounce) package slice almonds

In a medium bowl, combine broccoli florets, raisins, bacon, and green onion.  In a small bowl, stir together mayonnaise, honey, and lemon juice. Pour over broccoli mixture, tossing gently to coat. Stir in almonds just before serving.
