Chicken and Mushrooms in Wine – Positive Faith/Pedicure
My friend, Sandy, sent last week’s recipe – Curried Chicken Salad. Jay and I tried it and really liked it. I didn’t tell him it was curry, though. If you’re not crazy about curry, I suppose you could cut it from 2 to 1 tablespoon.
This week’s recipe is from Sandy, as well. Here are her comments.
“Here is the next recipe that I mentioned. I like to cook things that are quick. This takes only 20 minutes or so to fix and it’s good. Serve with a vegetable and salad and you have a low cal, healthy meal! I cut the other ingredients in half and cook only the amount of chicken that we will eat. I don’t like to have the meat dry.”
- 2 medium onions (sliced)
- 4 cloves of garlic (chopped)
- 4 boneless chicken breasts (strips or chunks)
- 1 cup white wine
- 3 Tbs. olive oil
- 1 can of mushrooms drained (fresh cut slices can be substituted)
- salt, pepper and parsley to taste
Saute onion and garlic in olive oil. Add the chicken and cook till browned. Add the wine and cook on med/low till the wine cooks down. Add the mushrooms and season to taste. Add water or more wine if needed.
