1. Sweet ‘n Spicy Mustard Sauce 2. Cheese Apples

This week, I’m sharing two recipes.  The mustard sauce is delicious with ham and our family loves the cheese apple dish, which  complements either ham or pork chops.  Enjoy!

   Sweet ‘n Spicy Mustard Sauce (makes 1 1/4 cups)       

  • 1/2 cup sugar
  • 2 egg yolks
  • 2 tbsp. dry mustard
  • 2 tbsp. all-purpose flour
  • 1 cup evaporated milk, divided
  • 1/4 cup vinegar
  1. Whisk together first 4 ingredients and 1/3 cup evaporated milk in small bowl.
  2. Cook remaining 2/3 cup milk in a small heavy saucepan over medium heat, stirring often, 1 to 2 minutes, or just until bubbles appear. (Do not boil.)
  3. Whisk in mustard mixture and cook, whisking constantly, 3 to 5 minutes or until smooth and thickened.
  4. Remove from heat, and let cool 15 minutes; whisk in vinegar.
  5. Serve immediately, or cover and chill until ready to serve.  Store in airtight container in refrigerator up to 1 week.

  Cheese Apples (side dish)

  • 1 can sliced apples (not apple pie filling, unless you want to make a dessert)
  • 1 stick softened butter or margarine
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/4 lb. Velveeta Cheese, cubed

Cream butter; add sugar and flour; add cheese.  Pour apples into 1 1/2 qt. dish.  Spoon mixture over apples – will be lumpy.  Bake 30 minutes at 350 degrees.
