Spinach Salad – Boarding the Train to Positive Faith
- 1 lb. fresh spinach
- 1/2 head lettuce
- 1/2 lb. bacon
- 1 1/2 cups large curd cottage cheese
- 1/4 cup sugar
- 1 tblsp. onion juice or 2 tblsp. finely chopped onion or onion flakes
- 1 cup salad oil
- 1/3 cup cider vinegar
- 1 tsp. salt
- 1 tblsp. poppy seed
- 1 tsp. dry mustard
Wah and break up spinach and lettuce. Dry. Fry bacon; cool & crumble. Add 3/4 cup cottage cheese to greens. Add the bacon. Combine remaining ingredients and add with 3/4 cup cottage cheese. Mix well and pour over greens. Serve immediately.
Note: I make the dressing ahead and refrigerate. Then I toss the bacon, cottage cheese, and dressing with greens at serving time. Double the recipe for a crowd.
