Sweet Potato Casserole – The Mouse Christmas

You can find my pumpking chiffon pie recipe under the Food for the Tummy Category.  Here is another of our family favorites for Thanksgiving and Christmas.  I double the recipe for a crowd.  I also go light on the sugar.  It’s so easy, rich and yummy.  Enjoy!

                     

  • 3 cups sweet potatoes mashed (4 or 5 baked)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 stick margarine
  • 1/4 cup milk

Mix and put in 9″ casserole dish.  (for doubled recipe, use a 9×13 dish or pan)

Topping:

  • 1 cup chopped pecans
  • 1 stick margarine
  • 1 cup brown sugar
  • 1/3 cup flour

Melt butter.  Add rest of ingredients. Mix well.  Spread  over top of casserole.  Bake 30 minutes at 350 degrees.
