Frustration to Freedom Saffron Rice and Shrimp

 Life can be frustrating and hectic.  Did you see the commercial where the parents are in the kitchen and call the kids to dinner?  They respond quickly and come running down the stairs, through the kitchen, and out to the garage to get in the car.   If you identify with this, you’ll like this week’s recipe.  It’s simple, quick, and very good.  Just add a salad and dinner will be ready in no time.                  


  • 1 small bag of saffron rice
  • 2 tablespoons of olive oil
  • 3 medium yellow squash, quartered lengthwise and cut into 1/4- inch-thick slices
  • 1 pound raw shrimp or bag of frozen small shrimp
  • 1/3 cup tightly packed fresh mint leaves, finely chopped (optional)
  • 2 tablespoons lemon juice
  • freshly ground pepper, to taste


1.  Cook rice according to directions on package.                                                                                                                                                                                                                 2.  About 10 minutes before the rice is done, heat oil in a large skillet over medium heat.  Add squash and cook, stirring constantly, until just tender (do not brown), 5 to 7 minutes.  Stir in shrimp and cook, stirring constantly for 2 minutes.  Stir in mint and cook for 30 seconds.  Stir in lemon juice; remove from heat.  Season with the pepper.  Serve over the rice.

    What a crazy couple of weeks we have had. Trip to Pittsburgh was wonderful but hectic! 3 teenagers going every which way! The TV commercial is sort of like their life! This recipe sounds great. Hope to see you before you head north again. Talked to Jackie yesterday. Such a shock. the funeral is in Asheville on Tues. It will be graveside and family. Will talk soon. Harriett
